In order to create their sloe gin, Sipsmiths pick from their lots of blackthorn bushes (whose fruit is part of the plum family). Seasonal variances produce slight changes in the fruit making sloe gin, like any good wine, different every time.
The sloe berries are frozen in order to break the skins, before being left to stew in Sipsmiths gin and sugar over the course of several months. This produces a flavour that is rich in sweet, complex fruit.
