There are Pedro Ximenez Sherry Casks from Spain, Ex-bourbon oak casks from the states and Oloroso Sherry casks, too. The chemical interactions between the spirit and the surrounding wood is what helps to infuse it with a raft of complex, sweet flavours.

Tasting Notes
In the nose, you’ll find a layer of cooked fruit, sherry and toffee. There are liquored cherry and ripe dark fruit notes in the body, with a finish that’s led by thick dark treacle.
