If you know someone who loves absinthe, then a personalised bottle of Pernod is sure to impress. Absinthe is something that can sound intimidating, but if consumed properly, this stuff is flavoursome and refreshing. While this particular form of the drink isn’t hallucinogenic, and doesn’t contain wormwood, it’s still intensely powerful.
This unique drink is based on star anise, a fruit tree found in the Far East whose dried form is used extensively in Asian (and, increasingly, Western) cooking. Here an essential oil is extracted before being added to other distilled oils, including that of mint and coriander. You’ll want to combine this drink with a flavoursome mixer (or even just water) – it’s serious stuff!

Tasting Notes
You’ll get a hint of aniseed and sweet liquorice on the palate, alongside a slight spiciness to finish. Combine with a decent mixer – or, if you’d prefer, go for the French method of dripping ice water onto a sugar cube in a teaspoon, slowly diluting the absinthe beneath.
