In order to create their gins, Martin Miller will make use of just a single copper pot which is called Angela, and as made in 1898 by John Dore and Sons. It is here that the heart of the process resides. The traditional, single-pot approach to distillation can be messy, and is almost always labour-intensive; but when it produces results like these, the trouble is always worth it.
Martin Millers gin famously incorporates Icelandic spring water at the final stage of distillation. After being distilled, It is shipped to a remote village called Borgarnes, at the head of a fjord on the west coast of Iceland. There, spring water is drawn directly from the earth and mixed with the spirit to produce a spectacular gin.
The nose is led by citrus, which is quickly supported by hints of spicy coriander and cinnamon. Following that, juniper and orange notes pick up on the creamy palate. The finish is long and warming.
